That is not ideal, especially if you will be the only one using it. If you are using it alone, YouTube will still be able to profile you, as all the videos will be watched by a single server. It would be just like using YouTube.com with a VPN. If you are self-hosting and a few people will use it, YouTube won’t be able to profile everyone, as it will think all the videos are being watched by a single person.
I use mailbox.org and I manage my own PGP keys. You can also encrypt your whole inbox with your key. To access your inbox, then, you will either have to use something like Thunderbird or give your private key to mailbox.org. And yes, I recommend using your own domain. Also, there is no free-tier.

If you aren’t relying on transcoding, you’re good. I am sure it can handle one or maybe even two streams. Most modern devices can decode H.264 and H.265/HEVC easily, and some even AV1. Watching videos with these codecs on any Smart TV or phone won’t give you a hard time.

Yes, they can read the data. But apps like Molly (Signal Fork) send encrypted notifications. So, the time and some other metadata may be read by the server, but the content and contact won’t be visible in plain text.
